Review: Beyond Beef Crumbles

Tonight is an exciting night.  We are finally wrapping up The Sopranos.  The hubby and I committed to this series and now we are down to two episodes.  Then hopefully I can talk him into watching Orange is the New Black!

I don’t know about you but watching The Sopranos makes me super hungry, I mean they’re always eating amazing food.  If I could get away with having pasta, bread, and Chianti for dinner every night I would.

In honor of Tony Soprano tonight I’m using Beyond Meat’s beef crumbles.  These are by far my favorite beef substitute.  All I do is toss a package of crumbles in with my favorite sauce and simmer and serve over pasta.  It’s perfection.  These crumbles would go great in a chili as well.  I know I say this about a lot of products, but you could serve these to your meat-eater friends and they probably would not notice the difference.

P.S. I also walked a ton tonight so I can justify this meal.  Here’s a picture from one of our walks.  I’ll never get tired of living near the ocean!

Summer Check In

Is everyone staying cool out there?  This is the hottest summer I can remember!  I just got  back from a brief stroll around the neighborhood with Soy Bean and I’m exhausted.

I can’t believe it’s already August!  I feel as though the summer has flown by yet we’ve been out of school forever.  I’m torn because there are parts about going back to work that I am looking forward to, but I love the casual routine of summer and my time with the boy.

Soy Bean and I have walked a ton this summer, well I’m the one doing the walking he’s in the stroller…We’ve enjoyed trekking around our neighborhood as well as the waterfront in Plymouth.

Yesterday we celebrated my hubby’s 39th birthday.  Last birthday in his thirties…I’m going to have to plan something substantial for next year…

We still have about three and a half weeks left until I go back to work.  It’s weird to starting thinking about school again.  This is my third year at my school and I already know what my goals are for this year.  Organization!  I’m already a fairly organized person, but now that I’ve been at this job for awhile I want to strive to be as efficient as possible.  As a special education teacher, I balance a lot of paper work, and it will make my job so much easier to have a structured system in place.

Besides plenty of walking around Plymouth we really have no big plans for the remainder of this summer.  I haven’t told my husband yet, but I want to plan a little couples weekend for the fall.  We’ll see if he reads this…

Review: Riced Cauliflower Stir Fry

Guess who is taking took a nap?  Soy Bean!

I’m (or I was) so exited this is a nap that doesn’t involve me holding him.  Freedom!  He’s been down for about an hour and so far I’ve paid three bills, vacuumed, mopped the floors, cleaned the counters and made lunch.

Speaking of lunch today I pulled out a bag of riced cauliflower stir fry that I picked up from Trader Joe’s the other week.  It was an easy enough meal to make.  I opted to add in some frozen broccoli, fresh peppers, and chickpeas for a little extra protein.  I topped it off with some nooch, Braggs and hot sauce.

I really enjoyed it!  My husband actually thought it was real rice, too.  It had great flavor and you can add pretty much anything to your liking.  You can easily bulk it up for a main course or utilize it as a side dish.  Best of all if you eat the whole bag it’s only 225 calories!

****I meant to post this this afternoon but guess who’s dog barked and woke up the baby…and guess which dog it was.  We still love her (sometimes).

 

Easy Lentil Enchiladas

I had a few requests for this “recipe” the other week, sorry for the delay!

When it comes to meals, easier is better for us these days.  I recently hit a home run with dinner.  It was simple, healthy, and most importantly delicious.  If you ever find yourself at a Trader Joe’s make sure you pick up a package of the precooked lentils in the refrigerated section, usually by the tofu.  I love these lentils, and best of all you can eat them right out of the package!  Lentils are a great source of protein and an excellent meat substitute, especially if you’re trying to stay clear of processed foods.  In this case, I used them to fill my enchiladas.  So here’s what I did, but feel free to tweak it to your liking.  I love to pack my enchiladas with veggies, but the tortillas tend to explode!  So that’s why my veggies are on top, plus, its kind of pretty isn’t it?

Lentil Enchiladas

  • One package precooked lentils from Trader Joes
  • One can of vegetarian refried beans
  • One packet of taco seasoning (or choice of spices)
  • One packages of corn tortillas
  • One can of your favorite enchilada sauce
  • Chopped veggies of your choice (I used broccoli, tomatoes, and onions)

Preheat oven to 350.  Basically all I did was spread a layer of refried beans on the tortilla  In a separate bowl I mix the cold lentils and taco seasoning.  Next I placed a healthy spoonful of the lentils into the tortilla on top of the beans and wrapped the tortilla.  I then placed the enchilada in my cast iron skillet but you could use any baking dish.  Once I wrapped up all my enchiladas I topped them with the chopped veggies and drizzled the can of enchilada sauce over everything.  I cooked these for about 25 minutes.

That’s it!  Super simple and tasty.   My husband loved it, and it make great leftovers for lunch the next day. I served these with fresh guac and hot sauce.  You won’t even miss the cheese and sour cream.  Enjoy!

Checking In…

One of my goals for the new year was to blog more, apparently I’m already failing at that!  It’s been a busy January with lots to do at work and busy weekends seeing friends and family.  We chose to hibernate for MLK day and I’ve been enjoying it even though I always feel like I should be doing more.

We started today off with a delicious juice.  I’ve been juicing quite a bit this pregnancy every since my husband retrieved his old juice from his parents’ basement.  Juicing can be time consuming, messy, expensive…but so delicious, and honestly after  I drink a fresh juice I feel rejuvenated.  I’ve been gravitating towards apple, carrot and ginger juices.  I usually like to add something green in there like kale, but I didn’t grab any this weekend during my grocery haul.  Today I did throw a lemon in there.  I could drink this everyday, though I know I should try to balance it more with leafy dark greens.

I ventured out to Target to grab a shower liner (it wouldn’t be a weekend with at least one trip to Target).  I was going to check out Bed Bath and Beyond but honestly I was SO hungry.  I’m adjusting to my rediscovered appetite.  After months of feeling constantly queasy it’s nice to finally feel the desire for food again, even though I go from zero to ravenous rather quickly.  I had to go home to make lunch, I need to eat or else I’ll feel sick and if you ask my husband…hangry!

Yesterday we visited my brother and his partner and went out for dinner at Red Lentil.  I’ve done a write up for Red Lentil on here before and it did not disappoint.  I didn’t take a picture of it, but we order the vegan nachos for an appetizer and it was awesome!  The hubby and I have a gift card and we will be ordering those again next time we are there.  I got the shepard’s pie, which was delicious and huge!  My husband had the leftovers for lunch today, easy work for me!

Hence the hibernating of today…I did do some laundry and made scones that I will share on here.  Also, got in some puggle snuggles.
